Where can I find an explanation of INCIPIT?

I've been using hymnary.org quite a lot recently - and I noticed the INCIPIT field - and I think I've worked out how it works [it's a very useful tool]. 

But I have searched all around your site and I can't find any explanation of INCIPIT or any guide for its use. 

Can someone point me in the right direction?
